Spicy Chicken on the Oven With Potatoes (Piri-piri)

Time: 2-3 hours
Difficulty: Easy

Ingredients:

  • 1 kg chicken thighs (or 1 chicken leg per person)
  • 2 onions (if you like more, go ahead)
  • 2 garlic teeth
  • 2 bay leaves (take out the pointy and the middle)
  • 2 glass white wine or beer
  • 1,5 kg Potatoes
  • Sea salt, pepper, paprika, at taste

Instructions:

Sprinkle olive oil in an oven tray. Slice unions in rings, cover completely the bottom of the oven tray. Put chicken thighs (with skin) on top of the union rings, leave sufficient space between the thighs for the potatoes. Peal and cut potatoes in cubes, divide them over the tray in between the chicken thighs.

Sprinkle the sea-salt  (coarse grained), fresh black pepper and red crushed red pepper over the contents of the oven tray; usually I put a little extra salt on the chicken.

Slice 2 - 3 teeth of garlic (like union rings) and “hide” them below the chicken thighs the potatoes together with two (complete) bay leaves.

Pour on top tomato pulp (like 50% of all contents are covered with this) and pour white wine richly over the tray contents (like half a bottle).

Pre-warm up the oven on 200 degrees (US: 430 degrees Far.), put oven tray in there for 15 minutes, then lower the temp to 180 degrees (US: 350 degrees F.) for another 1.5 hour or a little more (depends on your oven it can take almost 2 hours).

During this time, turn the chicken and potatoes like 2 - 3 times (mixes the flavours). Assure there is always enough liquid (wine) to make the tomato - olive-oil sauce boil during the process; it should never get dry. If you don't have wine, use a little of water.
